RECIPE VIDEO 1 Fried oyster mushroom burger
Serves 11 burger bun2 big oyster mushrooms1/3 c plant milk1 tbsp lemon juice1/3 c flour1tsp smoked Paprika1 tsp cuminSalt and pepper1/3 c oil2 tbsp barbecue sauce1 tbsp sriracha1 tsp cornflour1 tbsp waterOptimal fillings ( coleslaw, tomato, diced onion)
In a bowl combine plant milk and lemon juice and let sit until it curdles and forms a vegan buttermilk then in another bowl combine flour, smoked paprika,cumin, salt and pepper stir that till combined. Dip and coat the mushrooms completely in first the buttermilk mixture then into the flour mixture, then set aside, in a pan over medium heat add in oil and heat. Then add in battered mushrooms and fry for 2-3 minutes on eat side or until golden brown. Then set aside. In a bowl add in barbecue sauce, sriracha, paprika, corn flour and water and mix until well combined. Heat a pan over medium heat and add in the sauce once it starts too heat up add in the fried mushrooms and coat evenly. Assemble on your bun with your favourite fillings and enjoy! RECIPE VIDEO 2 King oyster mushrooms “scallops”
Serves 11 king oyster mushroom
Marinate:1 c hot water1 tbsp miso paste1 tbsp vegetable stock1 tbsp dulse flakes or seaweed1 tbsp oil1 tbsp soy sauce
2 tbsp butterJuice from 1/4 lemon1 garlic clove minced1 tbsp parsley finely choppedPepper
Cut the top of your mushroom then slice into around 1-2 cm thick slices, in a container combine all the marinate ingredients and mix until well combined then add in the mushrooms and set in the fridge for 1-2 hours or ideally overnight. Once the mushrooms are ready heat up 1 tbsp of butter in a pan over medium high heat, add in the mushrooms and fry for 4-5 minutes on each side or until browning with a nice crisp along the outside. Video 3 Shredded king oyster mushrooms tacos
Serves 44 mini soft taco shells3 king oyster mushrooms1/2 c tangy barbecue sauce1 tbsp smoked paprika1 tsp chilli flakes2 c coleslaw mix2 tbsp mayo1 tbsp oilSalt and pepperOptional toppings  (parsley, pickle onions, lime, salsa verde)
Shred your  mushrooms with a fork until it forks king skinny strips, set aside and in a bowl add barbecue sauce, paprika, chilli flakes, salt and pepper mix well and then set aside. In a bowl add in coleslaw mix, mayo, salt and pepper and set that aside. Heat up oil in a pan on high heat then add in shredded mushrooms and cook for 5 minutes then add in your sauce and cook on medium high heat for another 5-7 minutes. Video 4 King oyster mushrooms “bacon” Serves 11 king oyster mushroom1 tsp smoked paprika1-2 tsp oil1 tsp soy sauce1 tsp maple syrup1 clove minced garlic1 -2 tsp corn starchSalt and pepperOptional (liquid smoke)
Preheat oven too 200 degrees, slice up your mushrooms into long skinny strips, then place in a bowl with the remaining ingredients and mix until eventually coated. Transfer to a lined baking dish and bake for 20mins turning half way!
Video 5 Spicy miso mushrooms
400g oyster mushrooms400ml hot water1/4 c miso paste1/4 small onion2 garlic cloves2tbsp sriracha1 tbsp soy sauce2 tbsp sesame oil1 tbsp hoisin sauce (optional)Pepper
Preheat the oven too 200degress, in a blender place all ingredients besides the mushrooms and blend until well combined. In a baking tin add in mushrooms and cover with the sauce, the mushrooms should be almost all covered. Bake in the oven for 40min too 1 hour depending on how strong you want the sauce too be on I left mine in for an hour and the sauce was really thick and strong in flavour.I served mine on top of a salad but there’s perfect on sandwiches, toast, wraps or simply by themselves.
